Sugar Cookie Recipe With Hard Candies

This is a simple recipe for sugar cookies covered with candies.
Ingredients
  • 120 grams butter
  • 120 grams sugar
  • 60 grams brown sugar
  • 1 table spoon molasses
  • 1/2 teaspoon vanilla extract
  • 1 egg
  • 500 grams flour
  • 1/4 tea spoon salt
  • 3/4 tea spoon baking powder
  • 30 – 40 hard candies (such as Life Savers), preferably in several flavors and colors
Instructions
  1. Pre heat oven to 375°F (or 175 degrees C). Line two baking sheets with parchment paper.
  2. In a large bowl, using an electric mixer, cream together the butter and both sugars until fluffy. Add the molasses and the vanilla extract, mixing until incorporated. Add the egg and mix until light and smooth.
  3. Sift together the flour, the salt, and the baking powder. Fold dry ingredients in to wet mixture. Blend just until flour is incorporated. Divide dough in half and flatten in to two disks. Wrap disks in plastic wrap and refrigerate at least an hour and up to 2 days.
  4. Remove any wrappers on the candies and separate them by color in to plastic bags. Use a mallet to crush candies.
  5. Place one disk between two large sheets of waxed paper and roll. Use cookie cutters to cut dough in to desired shapes. Transfer cookies to prepared baking sheets. Using a smaller cookie cutter or a knife, cut shapes into centers of cookies, reserving these center bits to add into extra dough.
  6. Use a spoon to sprinkle the crushed candy into the hollowed-out centers of the cookies, filling to the edges. Try to keep the candy within the centers. If cookies will be hung as ornaments or decorations, poke a small hole in the top of each cookie before baking.
  7. Bake 10 minutes. The candy should be melted and bubbling and the cookies just barely beginning to brown. Remove baking sheets from oven and place on wire racks to cool. Allow cookies to cool on pans at least 10 minutes; otherwise, the candy centers may separate from the dough. When cookies are completely cooled, remove and store in an airtight container.
  8. Makes 2 to 4 dozen sugar cookies, depending on how large you make them.

This is the simplest sugar cookie recipe.
Ingredients
  • 400 grams butter, softened
  • 500 grams white sugar
  • 4 eggs
  • 1 tea spoon vanilla extract
  • 1 1 kg all – purpose flour
  • 2 tea spoons baking powder
  • 1 tea spoon salt
Instructions
  1. In a large bowl, cream together the butter and the sugar until smooth. Beat in the eggs and the vanilla. Stir in the flour, the baking powder, and the salt. Cover, and chill dough for at least one hour (or over – night).
  2. Pre heat oven to 400 degrees F (or 200 degrees C). Roll out dough on floured surface. Cut into shapes with any cookie cutter. Place cookies apart on ungreased cookie sheets.
  3. Bake 6 to 8 minutes in preheated oven. Cool completely.
Notes

If you have not tried this recipe yet, you may use a tip for making cut-outs easily. You should put a sheet of baking parchment (now easily found in grocery stores) on your cookie sheet. Then roll the dough out directly on the parchment – lined cookie sheet. After you have made the ‘cut – outs’, appropriately spaced on the dough, you should peel away the excess dough from around and between the ‘cookies’ and bake as directed way in instruction above. The parchment is going to help to keep the bottoms of the cookies from getting too dark, eliminates any need for greasing the pan. This procedure allows you to remove the cookies from the sheet by simply sliding the parchment carefully off the side (which is especially helpful with extra large or delicate cookies), and can usually be reused in baking the rest of the cookies. You may have also rolled dough out on the parchment without having it on the cookie sheet, do the cutting and trimming, and then slid the parchment on to the sheet for baking, which is going to help when you are short of the cookie sheets – the next batch is ready to pop in to the oven as soon as the first comes out.

Anyway, this recipe of sugar cookies is really wonderful to be made. It will make quite a few cookies, so you can halve it if you want.
